Sebastien Zeman (Head Brewer)

Sebastien took both the most traditional and un-traditional path to brewing beer. His father’s side of the family has deep roots in the Czech Republic (formerly Czechoslovakia). Members of his Czech family had strong devotions to Pilsner Urquell, for others it was Budvar, and more bizarrely some even were devoted to Kozel. Whatever gene they possessed that had them devoted to an after-work Czech beer was certainly passed down to Sebastien. As he was coming of age, he enjoyed a nice beer wherever he could get one. His trips to Germany and the Czech Republic enabled him to affirm his love for a well brewed beer early on. By the time he was in university he was spending more time reading up on brewing methods than on micro or macroeconomics (this may explain his grades). With some light reading done, and a poorly thought-out dream in his head, he began homebrewing with his father. The first few batches were drinkable, but mediocre at best. Luckily, his friends had no problem gobbling up the beer, especially since it was free. When he returned to university, he spammed every single brewery in the Greater Toronto Area to take him on as brewer’s apprentice. Some kindly responded no, most simply didn’t respond, but there was one brewery who needed an extra pair of hands. When he explained in his interview that he would work for beer, the brewery had no problem bringing him on. It was here that he learned the difference between bathtub beer and how a professional brewery is run. He took this knowledge back to his homebrewing where he quickly invested in some better equipment, a much-improved cleaning and packaging process, and some designs for labels and logowear. He stands here years later, never one to shy away from an out of left field beer experiment or a late-night brewing session. If you catch him around the brewery, you can usually find him cursing like a pirate or very lightly napping in his brewing chair at 3AM after a brewing bender.
